  • Panicked a bit after 90 minutes or so that it was cooking to quick and adjusted pit temp and tried to cool it down
  • Got some advice to leave it and took it back to 275
  • Wrapped in foil and spritzed with apple cider vinegar and apple juice as well as drizzled with honey at approx. 12:20p
